The answer is simple, US players still play in regular casinos that are allowed to operate within the jurisdiction, even though they must pass through KYC.

Players from the US no longer care much about KYC so they are prepared to hand out the ID for verification since that is the only legally allowed means to access those sites.

If you are from US and they do a KYC check, your money will be confiscated if the casinos ban US.
