All I did was uninstall every version of Electrum, shut my macbook down, restarted it and then downloaded the newest version of Electrum again and - POW! I was able to access my wallet again...?  ???
Probably caused by installing the update while an instance of the old version was still running.
If not actively running, a "zombie" electrum process was still running in the backgound.

Because that'll prevent some files to be overwritten by the update.
Unlike in Windows OS, installing the Electrum application on macOS simply drags and drops the application file to the Applications folder. Delete the application from the Applications folder to the Trash to Uninstall Electrum.

New applications cannot be installed or copied to the Applications folder while the same software runs.

When I try to install the latest Electrum v4.4.2 (by selecting the Replace button), a notification appears as follows:
