I'm also seeing in the bottom left corner that it says "Not Connected: Proxy Enabled" Could this be one of the reasons why I'm not seeing things?
Yes, that's a problem. Click on the circle located at the bottom right corner of the window and disable proxy.
You can use Electrum even by using a Proxy. To be able to connect to the network, you have to open the Tor Browser (the green orb will change to blue).
