I agree. Have you ever tried spelt meal as a substitute for wheat?
I use whole grain wheat. Two times a carb meal is allowed per day (my doctor insists to go for 1x carb meal per day) and 1x flat bread (roti) is allowed per meal. Below is my today's lunch flat bread with bitter gourd (vegetable).
Wow, homemade or not, there's no way I'd have a 97 after pretty much any meal I'm eating, and pasta, not happening... I'd be having a great day if I were even starting meals at 97, your body is definitely handling sugar better than mine. Are you on a prescription?
I did many tests before figuring out what suits my body and what not. As I said even homemade pizza with thick crust create a spike in my blood sugar. So far no medications. My last A1C was 5.8 down from 6.3.
