Now I want to get back to basics and stay in BTC, accumulate for the long term, get out of centralization, KYC etc. Put my BTC on a cold card. Re-activate the node I had, etc.

Running full node these days is a bit more demanding.
1. If you don't want to run fulll node under pruned mode, you'll need at least 700GB to store whole blockchain (and other data).
2. If your device have less than 12GB of free/unused RAM, sync process could take longer after reaching certain block height.

- Acquire BTC via BITGET, then make a Wasabi conjoin and move them to a cold card.
- Send my USDT on a decentralized platform to buy BTC then cold card.
Or other ?

I'm not familiar with bitget exchange, but some exchange known to track Bitcoin you withdraw where they may freeze your account if they detect if you use CoinJoin. Here's an example with Gemini exchange, https://www.reddit.com/r/Gemini/comments/usvlny/just_received_a_disturbing_requestemail_from/.
