the Genoa pitch is notoriously challenging and it's not just because of the team strength or familiarity with the field well several factors contribute to its difficulty I guess the size of the pitch was kind of small which affected the ball movement and one thing player spacing, and also the pitch was hard and uneven surface which costs unpredictable bounces, making difficult for player to control the ball, which lead to mistakes and misjudgment especially for visiting teams.
Even if what you said is true, is it right to blame the condition of the pitch when the away team only lost narrowly when playing there? Especially if every pitch does have standards to be used in competitions like Serie A, so losing narrowly like that is just a very common thing and I don't think the away team should blame the facilities there. Actually Udinese weren't too bad when playing at Genoa's home ground, it's just that Udinese were unlucky enough to be able to equalize because the goal in the last minute was disallowed due to offside.
