In my gambling experience, I have never cashed out of gambling before the game ended. Although I have wanted to cash out once or twice, I have stopped there. I did not cash out because since gambling is a means of entertainment, why would I cash out before receiving entertainment? Even though I am offered a cash out offer that I can cash out now and receive more than my fixed bet amount. Many people may accept such offers voluntarily, but I do not and whether I will do so in the future will be announced later, but not for now.
You have your own way of perceiving gambling; it seems you are more into it for the entertainment and don't care about the result and the outcome.

Some people might say cashing out before the end of a game can make them feel less of themselves since it's a decision that clearly shows that the person doesn't trust their own prediction.

That's for them; as for me, I take any chances that I'm offered. If I'm in an opportunity where I see a significant amount to cash out and I'm unsure of the outcome of my remaining games, I will do that without hesitation.

It's a part of strategy for some gamblers especially those who have a  good experience about the possible outcome, same with you if I see opportunities and I'm in the impression that there's a possibility that the outcome may not be in my favor I'll rather to cashout early  and enjoy the amount even it's lesser compared to the potential winning, though I see the point why not cashing out if you are into entertainment as you are willing to risk the amount that allocated for your entertainment and not really after for the money as the fun is really enjoyed when winning your bet.
