They basically are creating ads for the casinos by playing those games in the streams, and they get money from that.

These days ads can appear in many shapes or forms, even as content itself.

The chances may vary, with the first as you said it could be that they do it paid by the casino company in other words there is cooperation behind this, and I agree with that but the other side there are also those who do it purely because of their own desires without any cooperation with the company or paid by the company.
Leading to an advertisement there are many gambling advertisements currently spread like on my own social media. This is one of their marketing techniques.
