Well, I dont think the high risk involved in price volatility is the reason why most casino don't have such market for betting on bitcoin price movement, I think the main reason is because the ability to bet on bitcoin and other currency's price movement is a rather new betting concept which will require any casino interested in having such feature to go into some kind of fresh development which some casino may not have the time or the man power required to make such happen..

Most casinos are already contented and even overwhelmed with the number of markets that they already have available for their users to bet/participate in, so they don't really care about building some thing new except it in the future becomes something their users are majorly requesting for.
If this is really about risk, Rollbit casino already have the bitcoin and other cryptocurrency price betting market available, and if they (Rollbit can do it), any other interested casino can too.

High volatilities may not be the reason though, but I don't agree with the part that casino are already overwhelmed with the amount of traffic that other game generate them and won't want to go into Bitcoin price prediction betting, although it's not a normal casino thing to do, that is why I mentioned poly market as the best shot for this kind of bets, since their have live events listed to bet on like betting on election and the rest.
