Exchangers - exchange services, f.e. changenow was mentioned earlier. Exchange - binance, bittrex, etc.

from what i understand exchanger refer to people that exchanging his coins from an exchange . exchange on the other hand means , trading platform where you use to exchange/trade your crypto's .
