I agree. Have you ever tried spelt meal as a substitute for wheat?
I use whole grain wheat. Two times a carb meal is allowed per day (my doctor insists to go for 1x carb meal per day) and 1x flat bread (roti) is allowed per meal. Below is my today's lunch flat bread with bitter gourd (vegetable).
Carbs != carbs, though (actually refering to @Torque's posts from the last days).
Also, protein and fat sources are subject to quality.
You know, these are just my opinions, i am different when it comes to eating. I don't really care about taste or crave for my neurons firing off, triggered by oral sensations. I eat to fuel my body and mind in a way that they are able to perform well. This is my only one life as a human, so why would i want to knowingly waste or degrade it (or prefer the neuronal firework of taste instead). For most (1st world) people, eating seems to be just like trying to keep their taste bulbs entertained, imo.
When you look at the consequences, i prefer the longer, healthier, more satisfying life. I don't feel to be missing out something. Actually, my bad nutritional habits of my youth and early adulthood gave me the Fructose malabsorption as a warning shot.
As i said, my opinions, my choices. Everybody should do as he/she likes, as long as his/her actions doesn't deliberately go against the wellbeing of others. That is my spiritual #1 rule of life (aka. "free will"), by the way.
Overthink your carb sources. Whole grain flours are richer in phytates, which block most nutrients of the grain core to be absorbed by the body. This will likely be compensated by other nutrient sources, but why keep out the good stuff we originally want to enter our system?
