I think quite a few people do use it to buy things, verge has a very large list of online stores which accept it, though most of those stores sell mostly particular products, the same goes for other currencies also, crypto as payment method is not widely adopted and we just don't have the same purchase options as we do with fiat. I think majority of the early adopters were motivated by this philosophy, price wasn't a criteria.

The monetary aspect is profit. Adopt Bitcoin for making money. I do believe that a good number of recent investors/speculators are in for money only. Leave aside ideology, even a few doesn't bother about the technological aspect. Nothing wrong in it. It is like a get-rich-quick-scheme.

I see what you mean, but how would you then guarantee that the interests would be paid ? As it seems to be the number 1 thing to do IMO. 
Is there a coin that pays interests without POS ? Through POW ? (a POW transaction that would check what interests need to be paid and proceed to the payments ?)

Stellar will be on rise but it will take few days now. Bitcoin's market has entered in heavy correction and it is effecting every single market. Once clouds of uncertainties will disappear we will see Stellar among first coins being on good healthy rise. You can wait or keep accumulating right now. Choice is yours what you think is best.
